Here is an interesting Jun recipe recommended by a seasoned canadian fermentor, for kimchi!
Onions, garlic, shallots, red pepper flakes and ginger (and fish paste if you want but he did not): blend them up in a blender or food processor until it is a paste.
Then put the sliced up cabbage, carrots, and diakon radishes in the paste in a jar or whatever container you like to ferment in.
then wait.
then eat!
